Strawberry Spinach Summer Salad

Summer is the time of lots of outdoor activity and movement, picnics and BBQs, and a good excuse for getting together and sharing dishes that highlight the season’s best produce. If that dish also provides you with a variety of nutrients and is a perfect post-recovery meal, all the better. Enter Pilates instructor Tela Anderson’s Strawberry Spinach Summer Salad — it’s easy to throw together after a sweaty workout, features delicious and healthy seasonal ingredients, and it makes any meal that much better.

After a Pilates or weight training workout, my favorite snack is a spinach, strawberry, feta cheese, and pepita salad.

Ingredients

  • 2 Tbsp. extra virgin olive oil

  • 1 Tbsp. white balsamic vinegar 

  • Coarse sea salt and freshly ground pepper to taste

  • 4 cups lightly packed baby spinach 

  • 1/2 cup thinly sliced strawberries

  • 2 Tbsp. pepitas  

  • 2 oz. crumbled feta cheese

Directions

  1. Prepare the dressing: In a jar with a lid, add the oil, white balsamic vinegar, salt, and pepper. Shake to mix.

  2. Assemble the salad: Add the spinach to a serving bowl and top with the strawberries, pepitas, and feta cheese. Add the dressing and serve immediately.

Tips

  • Use the sweetest strawberries you can find for the best flavor. If you don’t have strawberries, substitute with raspberries, blueberries, or dried cranberries. 

  • Add protein to this salad with grilled chicken, chickpeas, quinoa, or grilled salmon.

  • Prep the salad in advance and store everything in separate airtight containers until you’re ready to eat it. Dress and toss the salad just before serving.

  • Keep any leftover dressing in the fridge in an air-tight container for 4-5 days.
