Naya Rappaport’s Chickpea and Avocado Salad Recipe (Vegan + GF)
(Adjust ingredient amounts to your own preferences)
Chickpeas (cooked or from a can and rinsed)
Avocado, diced
Cherry tomatoes, halved
Red, green, and yellow peppers, diced
Fresh lemon juice
Salt and pepper to taste
Combine chickpeas, avocado, cherry tomatoes, and peppers in a large bowl.
Squeeze fresh lemon over salad and add salt and pepper to taste.
