Harley Pasternak’s Baked Apples with Yogurt Recipe

Like a cozy sweater in a snack — these baked apples with yogurt from celeb trainer and nutrition expert Harley Pasternak feel special and fancy without the mountain of ingredients required for your typical sweet treat. 

These baked apples require some prep ahead of time as they take two hours to prepare in the oven, but the results make it worth it. Pasternak says this healthy baked apples recipe tastes like Christmas, and although it takes longer to make than a typical snack, it still only requires four ingredients. A tool you’ll want to have handy? An apple corer. You’ll put the corer in the apple, twist it a couple times, then push it through the bottom to remove the seeds. Pasternak recommends choosing a glass, Pyrex, or casserole dish to bake the apples. Once the apples are arranged in the dish with water, a generous amount of cinnamon sprinkled inside and outside the apples gives it a delicious flavor, along with a boost of antioxidants and anti-inflammatory benefits. 

Bake this in an oven set to 325 degrees for two hours. After the apples are done, mix more cinnamon into Greek yogurt. Harley suggests putting the cinnamon yogurt mixture into a Ziploc bag and snipping off a corner so you can pipe it inside each apple more precisely. Genius!  

When you’re done, you’re left with a sweet treat that makes a perfect snack or dessert. This nutritionist-approved treat contains a mountain of fiber and antioxidants that are great for your gut and brain health. And to top it all off, it’s absolutely delicious. 

“You have the creaminess of the Greek yogurt, you have the soft, juicy apple, the cinnamon pops through. It’s one of my favorite things to have for a snack,” says Pasternak.

Harley Pasternak’s Baked Apples with Yogurt Recipe

Ingredients 

  • 6 apples  

  • 1 ½ cups water  

  • Cinnamon  

  • Plain Greek yogurt or skyr 

Directions 

  1. Preheat the oven to 325 degrees F.  

  2. Core your apples so that they are still left whole. Line them up in a baking dish.  

  3. Pour the water into the dish, creating a bath for the apples.  

  4. Generously sprinkle cinnamon inside the cores, as well as on top of the apples. It is okay if the cinnamon gets into the water.  

  5. Cover the dish with tin foil and bake in the oven for 2 hours at 325 degrees.  

  6. Once finished, combine cinnamon to taste with the yogurt and spoon or pipe the mixture into the core of an apple. Enjoy!
