Harley Pasternak's Easy Garlic & Ginger Shrimp Stir-Fry

You can never go wrong with a one-pan meal, and Harley Pasternak’s healthy shrimp stir-fry recipe is a hard one to beat.

Need a quick weeknight dinner you can make in a pinch? A stir-fry is the best solution for getting all the lean protein and veggies you need for a healthy, delicious, and satisfying meal. According to celebrity trainer and nutritionist Harley Pasternak, stir-fries are also a great way to express your cooking creativity. 

“Pick out any vegetables, any protein, and any kind of sauce, and you really can’t go wrong when you mix them all together,” says Pasternak. “The protein can be shrimp, it can be scallops, it can be chicken, it can be tofu." 

For this recipe, Pasternak uses shrimp, asparagus, peppers, spinach, zucchini, and snow peas. However, he reminds us that complex flavors don’t require complex instructions. “I find the simplest thing to do is buy bags of pre-washed, precut stir-fry vegetables in the frozen section of the grocery store. That makes things really easy for you to do.” And when you pair a quick-cooking protein like shrimp with an easy-to-grab bag of veggies, it’s the ultimate time-saver. 

Sizzling hot tip: If you don’t have a wok, a large pan with a lid will do just fine. It’s all about the flavor anyway, and this easy stir-fry is loaded with it. Adding some sesame oil in the pan gives it a beautiful taste, and garlic, ginger, and soy sauce make an incredible sauce together. If you look for a pre-made sauce at the store, he suggests finding one without added sugar.  

Finally, for some added texture on top, Pasternak likes to mix or rotate between toasted cashews, black sesame seeds, scallions, and peanuts to add a nice mouthfeel and crunchiness. A little bit of healthy fat to finish goes a long way.

Harley Pasternak’s Garlic & Ginger Stir-Fry Recipe

Ingredients 

  • 2 cups shelled and deveined shrimp  

  • Spinach  

  • Choice of vegetables, such as asparagus, peppers, spinach, zucchini, snow peas 

  • Garlic, chopped 

  • Ginger, minced 

  • Chili peppers  

  • 1/3 cup soy sauce  

  • Black sesame seeds, scallions, toasted cashews, or peanuts (optional)  

Directions

  1. Cook the shrimp separately and set aside.  

  2. Combine all the vegetables in a wok or large pan with a lid, seasoning with salt and pepper.  

  3. In a bowl, combine chopped garlic, ginger, and some chili peppers with a third of a cup of soy sauce.  

  4. Once the vegetables are done cooking, add the shrimp and sauce in the wok and stir to combine.  

  5. Serve in a bowl and garnish with optional toppings.
