5 Quick & Healthy Breakfast Recipes You Can Make The Night Before

Whether you’re a morning person or not, having a quick-to-make, nourishing breakfast is something we can all agree is a plus during one of the busier parts of our day. If you’re familiar with our blog’s recipes, you’ll know we like to focus on healthy and filling vegetarian or vegan dishes. We’ve rounded up from our recipe archives a handful of quick-to-make breakfast options that you can throw together the night before and take with you on the go the next morning so you have one less thing to do before you head out the door.

Waffles with fruit

You’ll just need banana, buckwheat, and brown rice to make these vegan toaster waffles. We recommend whipping up a double-batch on your meal prep day to give you 12-16 waffles, enough to last you through the week and freeze some too — they’ll be good there for 2-3 months.

Blue Chia Pudding on a table

Chia seeds expand up to nine times their regular size in liquid, plus they may be more readily absorbed into the body, too. To make this chia pudding recipe, you’ll want to soak your chia seeds in both coconut milk and coconut cream and let them sit out overnight. The next day, you’ll add in some yummy toppings like fresh fruit and granola to make it a complete meal.

Vegan energy cookies

Instead of reaching for a pre-packaged, processed bar, why not opt for something that has whole food ingredients? These quick and easy vegan energy cookies can be whipped up the night before in five minutes using ingredients you probably already have in your cupboard, like oats, bananas, walnuts, and dates. They’re delicious, filling, and work as a great option for either a quick breakfast or snack.

Vegan carrot bread being cut

If you’re not into savory breakfasts but still want to fit in some vegetables in the a.m., go for our vegan carrot bread. It’s made with lots of nutrient-rich ingredients like carrots, flaxseeds, oats, spelt flour, and pecans and can be easily made ahead for the week, or even made into a double-batch and frozen for later.

Coconut vanilla grain-free granola

Looking for a crunchy topping for your morning bowl of oatmeal that isn’t just more oats in the form of granola? Enter this grain-free granola, created by nutritionist Sarah Britton who had the same problem and was inspired to come up with this delicious recipe full of raw nuts, chia seeds, dried coconut, and more. You’ll find yourself sprinkling it on everything.
