Harley Pasternak's Easy Vegetable Omelet Recipe

An omelet is a great meal no matter what time of day it is. (Breakfast foods are the best kind of foods, right?!) This recipe from celebrity trainer and nutritionist Harley Pasternak is the perfect addition to your weekly meals. “It's got protein, fiber, and healthy fat,” says Pasternak. “The holy trinity of being full and healthy.” 

Pasternak supplements the omelet with extra egg whites for added protein, and although he listed out his go-to veggies to include, you can totally make it your own with your favorites. He also recommends cooking with a nonstick pan like ceramic so you don’t need as much oil. 

Bringing together an omelete is easy — just pop it all in the pan, let it sit, then flip. When finished, this meal pairs well with a topping of microgreens, as well as a side dish of bread and berries. Yes, you read that right — beautiful, delicious bread. 

“Don’t be scared of bread,” says Pasternak. “Bread can be a good thing if it’s the right bread. You want to make sure you avoid things that are cake-like. Make sure it’s really high in fiber. Make sure it’s low in sugar.” The addition of berries acts as a nutritious and vibrant palette cleanser that will end your meal on a sweet high note.

Harley Pasternak’s Veggie Omelet Recipe

Ingredients 

  • 1 whole egg  

  • 3-4 egg whites  

  • Spinach  

  • Broccoli  

  • Red peppers  

  • Avocado   

Directions: 

  1. After using olive oil or non-stick spray on the pan, add in the eggs, spinach, broccoli, red peppers, and avocado slices.  

  2. When the omelet is cooked on one side, fold it over so everything is held together. Flip it on the other side and cook for a few minutes.  

  3. Serve with toast and berries on the side as optional additions. Option to top with microgreens.
