Greens are important, but if you’re tired of salads, you can get them in soup form with this easy blender vegetable soup recipe from celeb trainer and nutrition expert Harley Pasternak. All you need to do is steam your favorite vegetables to soften them up, then pop them into a blender along with an avocado and a vegetable bouillon cube for added depth.  

You might be used to adding fruit to the blender to get your servings in the day, but the same principles apply for getting in your daily veg. Pasternak loves this recipe for its simplicity of instructions and health benefits. His tip is to use the water from steaming the vegetables, then fill up the blender one-sixth of the way with it. It’ll have a green tint to it from steaming the broccoli and the asparagus and will already have some of the flavors infused.  

After you blend everything until it’s smooth, top it off with toasted pepitas for a crunch, added fiber, and healthy fat, then spice it up with your favorite hot sauce for a kick. This blender soup is the perfect side dish complement to a lean protein for a full and balanced dinner.

Harley Pasternak’s Blender Vegetable Soup Recipe

Ingredients 

  • Broccoli  

  • Zucchini 

  • Asparagus  

  • 1 avocado half  

  • 1 vegetable bouillon cube  

  • Hot sauce (optional)  

  • Toasted pepitas (optional) 

Directions

  1. Steam the broccoli, zucchini, and asparagus together for a couple minutes until soft.  

  2. Add the vegetables to the blender until almost full. Add in avocado and a vegetable bouillon cube for flavor.  

  3. Use the water from the steaming process and add into the blender so it fills up about one-sixth of the way.  

  4. Blend for up to 5 minutes until completely smooth. Serve in a bowl and add hot sauce and toasted pepitas for garnish.
