Ingredients (makes 1 serving)
2 eggs
1/2 cup egg whites
1/2 cup black beans
1 1/2 cups mixed veggies (try onion, mushrooms, bell peppers, or spinach)
1/4 cup probiotic cottage cheese
1 teaspoon olive oil
Directions
Heat the olive oil in a pan over medium heat. Add mixed veggies and cook for 3-4 minutes until tender.
Stir in black beans and spinach and cook for another 2 minutes.
Whisk eggs and egg whites in a bowl. Add to pan and scramble everything until fully cooked.
Top with cottage cheese and your favorite seasonings, and enjoy.
