It’s got all the nostalgia of traditional banana bread mixed with a twist of new flavors to elevate your breakfast, snack, or dessert. “This would make a great breakfast or snack plus a protein shake,” says Jones. “If you’re tracking your intake for the week, prep your food ahead of time like this loaf. If it’s too many carbs per serving, cut the loaf into eight portions instead.”

Roxie Jones’s Cocoa Orange Blossom Banana Bread Recipe

Ingredients:

  • 3 overly ripe bananas, mashed + 1 whole banana cut in half

  • 1 cup egg whites

  • 1 cup almond milk

  • 2 cups gluten-free flour or flour of your choice (oats work well too)

  • 1/4 cup cocoa powder

  • 1 cup coconut sugar

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup finely ground pistachios or nuts

  • 1 1/2 tsp orange blossom extract (or another fun extract of your choice)

  • Chocolate chips at the end

Directions:

  1. Preheat the oven to 350 degrees. Grease and oil an 8x4 loaf pan.

  2. Blend wet ingredients together in a blender, and separately mix all dry ingredients together.

  3. Combine wet and dry ingredients and pour mixture into the greased loaf pan. Stir in chocolate chips (Note from Roxie: “I recommend 1/2-3/4 cup unless you love lots of chocolate chips — then pour the whole bag in, lol.”)

  4. Slice one banana in half and place on top of the prepared pan with batter. Bake at 350 degrees for 60-80 min. or until the knife comes out clean after sticking through the middle when the top is golden brown.
