Cocoa Orange Blossom Banana Bread

Roxie Jones’s Cocoa Orange Blossom Banana Bread Recipe
Ingredients:
3 overly ripe bananas, mashed + 1 whole banana cut in half
1 cup egg whites
1 cup almond milk
2 cups gluten-free flour or flour of your choice (oats work well too)
1/4 cup cocoa powder
1 cup coconut sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup finely ground pistachios or nuts
1 1/2 tsp orange blossom extract (or another fun extract of your choice)
Chocolate chips at the end
Directions:
Preheat the oven to 350 degrees. Grease and oil an 8x4 loaf pan.
Blend wet ingredients together in a blender, and separately mix all dry ingredients together.
Combine wet and dry ingredients and pour mixture into the greased loaf pan. Stir in chocolate chips (Note from Roxie: “I recommend 1/2-3/4 cup unless you love lots of chocolate chips — then pour the whole bag in, lol.”)
Slice one banana in half and place on top of the prepared pan with batter. Bake at 350 degrees for 60-80 min. or until the knife comes out clean after sticking through the middle when the top is golden brown.
