Naya Rappaport’s Chickpea and Avocado Salad Recipe (Vegan + GF)

(Adjust ingredient amounts to your own preferences)

Chickpeas (cooked or from a can and rinsed)

Avocado, diced

Cherry tomatoes, halved

Red, green, and yellow peppers, diced

Fresh lemon juice

Salt and pepper to taste

  1. Combine chickpeas, avocado, cherry tomatoes, and peppers in a large bowl. 

  2. Squeeze fresh lemon over salad and add salt and pepper to taste.

  3. Enjoy!
