Quick & Easy Coconut Chia Pudding Recipe - Vegan and Gluten-Free

For sound healer and kundalini yoga instructor Susy Markoe Schieffelin, her morning routine is a critical part of setting her day up for success. And in any solid morning routine, a healthy, filling breakfast is a cornerstone. Susy reaches for a bowl of vegan chia pudding with coconut cream to give her fuel for the day: “My favorite breakfast right now is homemade coconut chia seed pudding! I became obsessed with it when I was leading a retreat in Bali in October. It’s so easy.” 

Starting off your day with chia seeds is a smart move. Calorie for calorie, they are one of the most nutrient-dense foods around. Loaded with fiber, protein, omega-3 fatty acids, and antioxidants, chia seeds are easy to incorporate in your diet and chia seed pudding can be made overnight and ready to eat the next day.

Coconut Chia Pudding Recipe

Ingredients:

¼ cup chia seeds

1 cup of coconut milk

2 Tbsp. coconut cream


Toppings:

Fresh berries

Gluten-free granola


Optional add-ins:

Golden milk on top (almond milk with turmeric, ginger, vanilla, and cinnamon)


Directions:

  1. Mix ¼ cup chia seeds with 1 cup of coconut milk and 2 Tbsp. coconut cream in a mason jar and let it sit overnight. 

  2. In the morning, add some fresh berries and gluten-free granola. For extra flavor, make golden milk chia pudding by pouring some golden milk (almond milk with turmeric, ginger, vanilla, and cinnamon) on top.
