Kayla Nielsen's Sweet Potato Brownies (Vegan + Gluten-Free)

Aside from potentially being a confidence booster, these sweet potato brownies are what Kayla describes as “a dangerous kind of delicious.” They’re fluffy, moist, and rich with nutrients, not to mention vegan and free of gluten and refined sugar. It’s the perfect healthy dessert you’ve been looking for.
Whip up these yogi-approved sweet treats after a long vinyasa flow and delicious dinner, and it’s the perfect way to round out your day. Kayla Nielsen’s Sweet Potato Brownies Recipe
Ingredients:
1 cup sweet potato (Kayla uses organic)
2/3 cup gluten-free oat flour
1/2 cup cacao powder
2 Tbsp. melted cacao butter (can substitute avocado oil or coconut oil)
1 tsp. baking powder
1/4 cup date paste (can substitute with maple syrup)
1/4 cup almond butter (or any nut butter)
1 tsp. vanilla extract
Cinnamon
Sea salt
Optional Toppings:
Cacao nibs or chocolate chips
Chopped nuts for crunch
Almond pulp from almond milk (my recipe here)
Instructions:
Preheat your oven to 350 F.
Boil sweet potato until soft. The skin naturally falls off when it boils, but you can peel away anything residual that sticks.
Add boiled sweet potato to a food processor with nut butter, melted cacao butter, vanilla extract, and date paste (or maple syrup). Blend until smooth and creamy.
Add blended mixture to a large mixing bowl and stir in oat flour and cacao powder.
Once mixed, include baking powder and spice to your liking with cinnamon and sea salt.
If you’re adding cacao nibs, chocolate chips, nuts, or nut pulp, stir them in here. You can add them to the top once they’re in the baking tray.
Place mixture into a baking tray. Kayla bakes hers in a bread pan, spreading the mixture evenly with medium thickness.
Bake for 40 minutes or until cooked through.
Let cool, then cut and dig in!
