Harley Pasternak's Apple Pie Smoothie Recipe

Harley Pasternak’s iconic Apple Pie Smoothie recipe is an every-season favorite with fresh fruit and protein to start your day off right.

If you could bottle the taste of an apple pie, this smoothie would be it. Celebrity trainer and nutritionist Harley Pasternak loves this Apple Pie Smoothie for breakfast, but you could easily make it as a snack in between meals. With apples, cinnamon, a banana, and yogurt for a creamy texture, plus almonds for a subtle crunch, this quick and easy smoothie will be your new go-to.  

“This is my absolute favorite smoothie recipe,” says Pasternak. “It tastes like dessert, it smells like the holiday season, it’s got all the different textures and flavors that make your mouth happy. It also has protein, fiber, and healthy fat.” 

If you eat dairy, Pasternak recommends using strained yogurt for an excellent consistency. “This is sometimes called Greek yogurt, skyr, kefir, Quark. It has a lot of different names but it’s the thickest kind of yogurt you could get,” says Pasternak. But it doesn’t just add to the texture — there are so many health benefits too. “It has little to no lactose so it’s easy to digest, it’s great for gut health, it’s got protein, calcium, vitamin D, all the good things.” You can also add any alternative milks or yogurts if you want dairy-free options.  

Then come the apples, an amazing source of fiber and antioxidants. Hot tip: To increase the health factor, keep the skin on the apples when you dice them for the smoothie, as it contains most of the nutrients.  

Another added boost in Pasternak’s smoothie recipe? The power of cinnamon. “Cinnamon has a lot of health benefits. Cinnamon can stabilize your blood sugar, some research has been shown. There's a lot of medicinal benefits of really, really good cinnamon.” 

To round off the apple pie taste, the almonds play a key role. Pasternak recommends adding almonds to provide healthy fat, fiber, and a great mouthfeel. Because the almonds don’t blend all the way, it creates a cool, crust-like texture that mimics the pie. 

Once it’s all in the blender, run it until the mixture is smooth. To serve and make it look worthy of an Insta-breakfast photo, add an apple onto the rim and sprinkle some cinnamon on the top.

Ingredients 

  • 1.5 cups milk or alternative milk  

  • 1 cup strained plain Greek or Icelandic yogurt  

  • 1 medium-ripe banana  

  • 2 chopped red apples  

  • ½ teaspoon cinnamon  

  • 20 raw almonds, whole or chopped 
     

Directions

  1. Add all ingredients in a blender. 

  2. Blend until it reaches a consistency you prefer.
