How to Make Carrot Ginger Soup (Easy Vegan Recipe)

There’s something about soup that is so comforting, especially one that you’re able to make at home yourself. This simple recipe from Sakara packs in so much flavor with a blend of ginger and turmeric. These ingredients have added benefits of anti-inflammation and help aid digestion. When you feel like having a cozy meal this winter, you can whip this up in under 45 minutes and feel so satisfied. Most of the time is spent simmering the carrots in a pot, so after your prep work, it’s not too involved.  

After everything softens in the pot, you’ll throw it into a blender or you can use an immersion blender if you have one. A splash of apple cider vinegar at the end makes this an easily digestible meal. This addition means extra probiotics to support the balance of your gut microbiome. Ingredients (makes 4 servings)

  • 1 tablespoon olive oil 

  • 1 onion, diced 

  • 1 celery rib, diced 

  • 1-inch ginger piece, peeled and roughly chopped 

  • 3 garlic cloves, peeled and roughly chopped 

  • ½-inch piece fresh turmeric, peeled and roughly chopped 

  • 2 pounds carrots, peeled and cut into 1-inch pieces 

  • ½ teaspoon apple cider vinegar 

  • Salt and pepper, to taste 

Directions

  1. Heat olive oil in a large pot over medium heat.  

  2. Add onions and celery, along with a pinch of salt. Sauté until onions are translucent, about 5 minutes.  

  3. Add ginger, garlic, and turmeric and continue to sauté until fragrant, about 30 seconds.  

  4. Add carrots and enough water to just cover the carrots. Bring to a boil.  

  5. Lower to a simmer and cook until carrots can be mashed against the side of the pot with a spoon, about 30 minutes.  

  6. Add apple cider vinegar and blend soup until smooth. Seasoning with salt and pepper to taste. Add additional water when blending if the soup is too thick.
